Chicken Salad
I came up with the recipe last week when I was wanting to use some spring veggies.
So here goes:
- 1 can of chicken (drained)
- 1/4 cup minced red onion
- 1/4 cup minced green bell pepper
- 4 tbls mayo (I used Duke's brand)
- 2 tbls lime juice
- salt and pepper to taste
- 1/2 teaspoon parsley (dried)
- 1/2 teaspoon Italian seasoning
- Mix everything but chicken together in a bowl. Add chicken breaking it up and then serve with baked corn chips.
